Michele Sancillo manages the restaurant together with Silvia Panzer; passion and professionalism since 2007.

Michele started working in 1983 and in parallel attended the catering college in Vieste. After many years of experience as a chef in restaurants around the world – Londra, Lugano, Washington DC, Ortisei, Montecampione – he decided, together with his wife, to embark on the Hotel Palme Gemelle adventure. And his success has been confirmed.

Michele personally chooses the fish, meat, fruit, vegetables and legumes to ensure the best selection on the market. He takes care of the kitchen garden in the hotel grounds as well as the Palme Gemelle olive grove, producing high quality Apulian oil.

A surprise at the end of the meal: Michele is a master pastry chef and oversees all desserts, such as the exquisite mille feuille, the chocolate cake or the citrus or almond parfait. In the restaurant you won’t find the usual buffet, because the food is all fresh, never brought out a second time, and above all served at the table.
